  • Most toppings don’t need pre-cooking, but if you’re using raw meat such as ground beef or certain vegetables like mushrooms, you may want to sauté or cook them briefly before adding them to the pizza bowl for better texture and flavor.
  • To ensure even melting, you can cover the pizza bowl with a microwave-safe lid or microwave-safe plastic wrap, leaving a small vent for steam to escape.
  • Cooking time will vary greatly depending on your microwave (mine is 1200W) and the width and depth of the bowl. Always keep a close eye on your mug while in the microwave so it doesn’t over flow or over cook.

It’s not structured like brownies that are baked in a pan and cut into squares—this brownie is eaten with a spoon from a bowl. It’s a deliciously sharable new version of my 1-Minute Microwave Brownie in a Mug that went viral with over 10 million views and 2,000-plus five-star reviews.

As a professional chef, I love tinkering in the kitchen, but the reality for most of us (including me as a busy working mum!), is that we need recipes for delicious food that’s fast and easy to prepare. For all of those after-school snacks and dinners you need on the table in minutes, I have 100+ Mug Cake and Mug Meal Recipes.

The 2-Minute Microwave Brownie Bowl takes the Brownie Mug concept and makes it Bigger and Bolder. Instead of a single-serving, there’s enough to share, with an amped-up chocolate level and an extra fudgy and moist texture.

2-Minute Microwave Brownie Bowl Key Ingredients and Why

Ingredients for 2-Minute Microwave Brownie Bowl are separately prepared. Dry ingredients in a bowl including cocoa powder, all-purpose flour, sugar, and slat. Wet ingredients in a liquid measuring jug including milk, oil, and vanilla extract.

Flour:

  1. A fudgy brownie batter like this one has less flour and more cocoa powder than a cakey brownie recipe.
  2. All-purpose flour has the right amount of protein at 11% to keep the batter together without making it too chewy.

Dutch-Processed Cocoa Powder:

  1. Dutch-processed cocoa powder has been treated with an alkalizing agent to make it less acidic.
  2. The process also modifies its color–this cocoa looks redder–and gives it a milder taste compared to “natural cocoa.”

  1. Chocolate chips combine with the cocoa to create multi-layered chocolate flavor.
  2. Mixing chocolate chips into the batter elevates the texture of the 2-Minute Brownie, making it fudgier.

How to Make a 2-Minute Microwave Brownie Bowl

Mixing the Ingredients

  1. Measure carefully. In a smaller-scaled recipe like this one, even a small variation in one of the ingredient amounts can throw off the mixture.
  2. You have to be very careful when you’re mixing chocolate, because it can separate from your other ingredients. Just want to mix it very lightly until a batter is formed, and then stop mixing.

Cooking the Brownie Bowl

  1. The Brownie Bowl cooks very quickly, and if it’s overcooked, it will be dry and tough. To be safe, check your brownies at 90 seconds to see if they’re done. If it’s not ready, put it back in the microwave and check at 15-second intervals.
  2. The brownies are done when they’re firm to the touch and the batter on top doesn’t look wet.

Perfectly cooked brownie bowl with firm edges but they’re still soft with a JUST-set-to-the-touch center, no longer jiggling. Chocolate chips add color contrast.

Cooling and Serving

  1. Let the 2-Minute Brownie Bowl cool for a minute before eating.
  2. Top it off with whipped cream or my easy No-Churn Vanilla Ice Cream.

I don’t have a microwave. Can I make a 2-Minute Microwave Brownie Bowl in the oven?

  • Yes, you can bake it in an oven-safe bowl at 350°F/180°C for roughly 12-15 minutes.
  • Be careful not to over bake your brownies! You know when your brownies are perfectly cooked when they’re firm around the edges but they’re still soft and JUST set to the touch in the middle, no longer jiggling.

How do I keep my 2-Minute Microwave Brownie Bowl from being dry?

  • Be sure to measure the ingredients carefully. Even slightly too much flour could make the 2-Minute Brownie Bowl dry.
  • My microwave is 1200 watts, and it took 2 minutes and 15 seconds to cook, but microwave cooking times vary. Check your 2-Minute Brownie Bowl after 90 seconds.

Can I make my 2-Minute Brownie Bowl vegan?

Yes. If you don’t drink dairy milk, you can use any kind of a nut milk soy milk or whatever you like.

Gemma’s Pro Chef Tips:

  • You must use Dutch-processed cocoa for the right flavor. Regular cocoa powder is too acidic for this recipe and will result in a flat, bitter, off-tasting brownie.
  • The amount of sugar seems high but this is what gives the brownie the dense and fudgy texture that differentiates it from a cake.
  • The cooking times are approximate because everyone’s microwave is different. It may take a few tries to get this recipe perfect. The test batches are usually still delicious!
  • You can switch out the chocolate chips for white chocolate or chopped nuts in the same amount.

  • ½ cup(4 oz/115 g) granulated sugar
  • 6 tablespoons(1½ oz/43 g) Dutch processed cocoa powder
  • cup(1½ oz/43 g) all-purpose flour
  • teaspoon salt
  • 6 tablespoons (3 fl oz/85 ml) whole milk
  • cup (2 ½ fl oz/75 ml) vegetable oil
  • ½ teaspoon vanilla extract

What Is A Microwave Carrot Cake Bowl?

Carrot Cake is a dessert typically composed of flour, carrots, spices, sugar, eggs, raisins, chopped nuts, and vanilla extract. A popular pairing with this decadent dessert is cream cheese frosting. While the origin of Carrot Cake is disputed, it’s generally known to originate from England, Switzerland, or Denmark.

There are several variations of Carrot Cake such as carrot mug cake, layered cakes, sheet cakes, cupcakes, muffins, and more. However, in this recipe, we are making a single cake omitting the eggs and using a microwave! It’s essentially a simplified version that’s faster to prepare and bake, but it tastes just as delicious or even better.

Why Add Carrots To Cakes?

Carrots are the shining star of any Carrot Cake. After all – it’s in the name! But, there’s a reason why carrots have been incorporated into cakes. 

Carrots add a ton of moisture, texture, and sweetness to your cake batter. It also balances out the tangy cream cheese frosting without being too overpoweringly sweet. Fun fact: Back in World War II, when there were sugar rations, carrots were used to sweeten cakes.

Ingredients To Make A Carrot Cake

For The Carrot Cake:

  • Butter: Butter creates a light and tender texture in your moist Carrot Cake. Because butter contains around 80% milk fat and 20% water which will evaporate during baking to make cakes rise. Comparatively, oil is 100% fat so usually leads to a denser result.
  • All-purpose flour: All-purpose flour is the base of this cake and its 9-11% protein is perfect for binding ingredients together and yielding a soft instead of chewy cake.
  • Dark brown sugar: Dark brown sugar not only creates a deeper, caramel-like flavor and color to your cake, but also adds moisture.  If it’s hard to find, use my How to Make Brown Sugar recipe to make it at home. 
  • Baking powder: Baking powder gets activated by liquid to help your cake rise.
  • Cinnamon: Highly aromatic, sweet, and warm, it’s perfect for a spiced cake.
  • Whole milk: I like to use full-fat milk in my recipes for its rich flavor and creamy consistency. 
  • Carrot: Use fresh, finely grated or shredded carrots.

For The Cream Cheese Frosting:

  • Cream cheese: Use softened, full-fat, brick-style cream cheese for the best result. Make my How to Make Cream Cheese Recipe so you never will run out! Spreadable cream cheese from a tub is ok but the frosting tends to be softer. 
  • Butter: Soften your butter properly for easier creaming: when you push the butter and it makes an indent, but your finger doesn’t easily squish right through. Over-softened butter can’t retain air so well hence will lead to a runny frosting.

How To Make A Microwave Carrot Cake Bowl

Make The Carrot Cake:

  1. Place the butter in a soup bowl and microwave until melted.
  2. To the bowl, add the flour, brown sugar, baking powder, and cinnamon. Stir with a fork.
  3. Whisk in the milk, grated carrot, and vanilla extract. Stir until combined and smooth.
  4. Microwave on high, then in intervals. Check for doneness in between until it’s cooked through. Let cool and make the frosting.

Make The Cream Cheese Frosting:

  1. First off, using an electric hand mixer, cream the cream cheese and butter together on high speed until light and fluffy. This aerates the batter and builds a steady structure to hold sugar. Otherwise, the frosting will turn out thin and runny. 
  2. Secondly, gradually add the powdered sugar a little at a time until combined. Lastly, add the vanilla extract.
  3. Lastly, top the cake with the frosting and enjoy!

Making a carrot cake by adding dry ingredients into melted butter, then stirring in vanilla, milk and carrots until smooth.

One of the best parts about this recipe is that you can easily make it ahead of time. Make the cake up to 8 hours before and leave it in the refrigerator. When you’re ready to bake it off, pop it in the microwave and let cool before frosting.

How To Store Microwave Carrot Cake

  • Room temperature & fridge: You can store leftover Microwave Carrot Cake in an airtight container at room temperature for up to 1 day. In the meanwhile, keep any leftover cream cheese frosting in an airtight container in the refrigerator for up to 7 days.
  • Freezer: You can also freeze your carrot cake if you wrap it tightly in plastic wrap or aluminum foil and place it in a freezer-safe bag. For the icing, you can either freeze the cake with the frosting or frost it after thawing.

How many watts should my microwave be?

I cooked this cake in a 1200-watt microwave. However, every microwave is different, your cake may take more or less time, so watch for doneness.

How do I know if my microwave cake is done?

To check if your Microwave Carrot Cake is done, you can insert a toothpick or skewer into the center of the cake. If it comes out clean, then it’s done. You can also lightly touch the surface of your cake, and if there’s a slight spring, then it’s ready.

Can I microwave this cake in a plastic container?

I recommend using a microwave-safe ceramic or glass bowl for this recipe because it’ll provide a sturdy base for you to bake your cake. However, if you have microwave-safe plastic containers on hand, you can use that as well.

Note: Please do not cover your cake with plastic wrap or lids as they are not microwave-safe and are not necessary to cook your cake.

Why is my carrot cake dry? How can I avoid a dry carrot cake?

A good thick batter and monitored baking can contribute to a moist carrot cake.

  • A good thick batter: Make sure your batter is not dry in the first place. Flours in different places absorb liquid differently. Note to hold back some liquid by using up to 3/4 in one go and adjust it accordingly to get the same consistency as the recipe. 
  • Monitored baking: Make sure to cook your Microwave Carrot Cake in intervals. If you cook it all in one go, you’re likely to end up with a dry cake. If your microwave is on the stronger side, you can add more carrots or milk to add more moisture.

What should I do if I don’t have an electric hand mixer?

Though using an electric hand mixer will make your job a lot easier, there’s nothing a little elbow grease can’t fix. You can use a whisk to combine your ingredients.

  • If you like raisins, walnuts, or pecans in your carrot cake, you can add 2 tablespoons to the batter.

  • Add some nutmeg to your cinnamon to create a deeper spiced flavor!

  • A little freshly grated ginger (about ½ teaspoon) is an excellent addition to this cake.

For The Carrot Cake

  • 3 tablespoons (1½ oz/42 g) butter
  • ½ cup (2½ oz/71 g) all-purpose flour
  • cup (2 oz/57 g) dark brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • cup (2½ fl oz/75 ml) whole milk
  • ¼ cup (¾ oz/21 g) finely grated carrot
  • ½ teaspoon vanilla extract

For The Cream Cheese Frosting

Instructions

Make The Carrot Cake

  • Place the butter in a medium 2-cup (16 fl oz/450 ml) capacity soup bowl and microwave for 15 seconds, or until melted.
  • To the bowl, add the flour, brown sugar, baking powder and cinnamon and stir with a fork.
  • Next whisk in the milk, grated carrot and vanilla and stir until combined and smooth.
  • Microwave on high for 2 minutes, then 15-20 seconds at a time, checking for doneness in between, until cooked through (the top will spring back if pressed when it's done). Let cool for 15 minutes and make the frosting.

Make The Cream Cheese Frosting

  • Using an electric hand mixer, cream the cream cheese and butter together on high speed for 2 minutes, until light and fluffy.
  • Gradually add the powdered sugar a little at a time until combined. Lastly add in the vanilla extract.

My Microwave Chocolate Lava Cake For Two can be made in just one bowl and baked in just minutes in your microwave! You can even prep the batter in your microwavable bowl ahead of time, pop it in the refrigerator, and bake it off when you’re ready! 

This easy Chocolate Lava Cake recipe is perfect for Valentine’s Day dessert. The dessert for two is unbelievably gooey and fudgy. For a more grown-up flavor and to help bring out that chocolate flavor even more, I add espresso powder! It doesn’t make the cake taste like coffee, but it really boosts up the taste. (If that’s not your thing, feel free to leave it out!)

What Is Chocolate Lava Cake?

Chocolate Lava Cake, also known as Molten Chocolate Cake, is a chocolate cake known for its warm molten center. Chances are, you’ve come across this dessert at restaurants like Chili’s or Longhorn Steakhouse, but the cake is originally from France, having been invented in the ’80s. 

Tools You Need

Ingredients For Chocolate Lava Cake

  • Butter: Use a good quality salted or unsalted butter for this recipe. It helps keep the cake moist and tastes delicious! 
  • Egg: I use a large egg. Be sure to let it come to room temperature before using.
  • Whole milk: I always use full-fat, whole milk in my recipes. Fat = flavor.
  • Vanilla extract: Vanilla helps bring out the other flavors in desserts. You can make your own Homemade Vanilla Extract
  • All-purpose flour: Flour serves as the base of this recipe. Use gluten-free all-purpose blend flour if needed! 
  • Granulated sugar: White sugar adds sweetness to your chocolate cake.
  • Unsweetened cocoa powder: This will give you the deep chocolatey taste in your lava cake. Use unsweetened, so you know exactly how much sugar you are putting into the recipe.
  • Espresso powder: Adding espresso powder helps bring out even more chocolatey flavor! It won’t taste like coffee, but you can omit it if you prefer. Use instant espresso powder.
  • Baking soda: This helps the cake rise.
  • Salt: A pinch of salt enhances all the other flavors.
  • Bittersweet chocolate: I use bittersweet chocolate (63 – 72%) for that deep chocolate flavor.
  • Water: A bit of hot water helps create steam in your microwave, keeping your cake nice and moist. 

How To Make a Microwavable Chocolate Lava Cake Bowl

  1. In a microwavable bowl, melt the butter and then stir in the egg, milk, and vanilla extract.
  2. Whisk in the flour, sugar, cocoa powder, espresso powder, baking soda, and salt.
  3. Sprinkle chopped chocolate on top of the chocolate mixture batter and then drizzle the hot water on top. Do not stir it in.
  4. Microwave on high for about 1 minute 30 seconds, then check for doneness. 
  5. While being sure not to overcook it, add 10 seconds at a time until it is done. Let it rest for 1 minute, top with vanilla ice cream or a dollop of whipped cream, and serve!

Can You Make Microwave Chocolate Lava Cake Without A Microwave?

Yes! I already have a recipe for Chocolate Lava Cake For 2 written to be baked in an oven! It takes a bit longer to bake, but the process is relatively the same! 

What Type Of Chocolate Should You Use For Lava Cake?

For this recipe, I use unsweetened cocoa powder and bittersweet chocolate. 

Unsweetened cocoa powder is pure chocolate, with most of the cocoa butter removed. It has an intense chocolate taste and is typically what I use when making most of my chocolate desserts. I use unsweetened so I can see how much sugar I am adding to the recipe.

Don’t use Dutch process cocoa powder for this recipe. Dutch-Process, or “European-Style,” cocoa powder has been treated with an alkalizing agent, which changes its color and gives it a more mild chocolate taste. 

Since it has been treated, it won’t react to the baking soda in this recipe, which means your cake won’t rise. 

I also use chopped bittersweet chocolate (63-72% cocoa solids) in my lava cake. This is what melts down and gives you the molten middle. I prefer bittersweet chocolate because I like the balance between bitter and sweet. If you prefer, you can use semisweet or even milk chocolate for your lava cake.

Why Add Espresso Powder To Chocolate Lava Cake?

Instant espresso powder helps draw out the chocolate flavor of the cake and makes your cake taste a bit more complex. 

Because espresso and chocolate have a lot of the same flavor profiles, adding a bit of espresso powder to chocolate transforms a sweet chocolate cake into one that is deeply chocolatey. 

It won’t make your cake taste like coffee, but if you prefer, you don’t have to add the espresso powder. 

Can I Make Microwave Chocolate Lava Cake Ahead Of Time?

Yes! You can prepare the batter of this cake before you plan to microwave it and place it in the refrigerator until you’re ready to go. Cover the prepped batter with plastic wrap and store it in the fridge for up to 2 days. 

How Do I Store Molten Lava Cake?

Lava cakes are best eaten as soon as they are baked. If you let your cake sit too long, the residual heat will continue to bake your cake, and your gooey chocolate middle will disappear! 

However, if you’d like to store leftover lava cake, wrap it in plastic wrap or store it in an airtight container and place it in the refrigerator for up to 3 days. Just know that it may not have its melted chocolate core once you reheat it.

Can you make Chocolate Lava Cake without eggs?

How do I know if my Chocolate Lava Cake is done?

It is a bit tricky to figure out when your lava cake is done because of its liquid center. You will know when your lava cake is done baking once the edges are cooked all around, and the center has risen. It should still be slightly soft but not jiggly. 

Why is my lava cake dry?

Your lava cake may become dry or lose its melted center completely if you cooked it for too long in the microwave. Overmixing also leads to a tough, dry cake, so be sure to mix your ingredients until they are just combined. 

Why did my lava cake collapse?

Overmixing can lead to a tough cake, but it can also cause your lava cake to collapse. Stirring too much will add more air to the batter, which will make your cake lose its structure. Mix your ingredients until they are just combined.

What Is Red Velvet Cake?

Although it’s a lot of people’s go-to order when they find themselves at a cupcake shop, it’s a difficult cake for many to explain. Essentially, red velvet is a chocolate cake, but a little different. The acid, in this case, the vinegar, breaks down the gluten in the flour and gives the cake a “silky” feel, and back when bakers used raw cocoa powder, the acid made it turn a dark red. Hence its name, “red,” for its coloring, and “velvet” for its texture.

Does Red Velvet Have Food Coloring?

When bakers used raw cocoa powder, the acidic reaction was enough to give the cake its iconic coloring. However, it’s a bit harder to achieve as most store-bought cocoa powder is treated with an alkalizing agent to negate acidity. All that scientific talk to say — yes, red velvet cake now has a touch of food coloring. 

If you prefer to omit the food coloring, go ahead! Including it or not including it does not affect the taste of the cake — although it won’t have its bright color.

  • I use milk and vinegar in this recipe; however, if you have buttermilk on hand, feel free to use that! 
  • Mixing this batter in a separate bowl might create more to wash, but it keeps your cake looking nice and neat.
  • Every microwave is different — I made this cake bowl using a 1000-watt microwave, which took 2 minutes. You may need to adjust the timing depending on your microwave. Start out cooking this for 1 ½ minutes. Check the cake and cook in 30-second increments until your cake is done.
  • To make a quick cream cheese frosting for this cake, combine ¼ cup (2 oz/57 g) softened cream cheese with 2 tablespoons of powdered sugar until smooth. If it is too thick, add a few drops of milk.
  • You can divide this cake into 2 mugs if you prefer. Cook each mug for around 1 minute.

The ingredients in this recipe are super simple, so if you have the banana, you likely have everything you need for this quick, delicious banana mug cake.

What Is A Microwave Cake Bowl?

If you’ve been with me on this ride for a while, you know that I love mug cakes — so much so that I have 100+ Mug Cake & Mug Meal recipes! As a pro chef, I love spending hours working on my craft — but as a mum with a life, I also love easy quick mug cake recipes. A microwave cake bowl is the evolution of this idea and a larger portion, made in a similarly fast fashion.

Mug cakes and microwave cake bowls are cakes baked in a cup or bowl with a microwave, but they taste a lot fancier than they sound. These single-serving cakes are steamed in the microwave — which means you’ll never get a dried-out cake.

They’re the perfect dessert for when you don’t want to make a whole batch or a family-sized serving. I highly recommend bookmarking this recipe for midnight snack cravings.

Tools You Need To Make Microwave Banana Cake

Can I Bake A Cake Bowl In The Oven Instead Of A Microwave?

This recipe is perfect for the microwave as all the ingredients get steamed, resulting in a super moist cake. However, if you do wish to make this in the oven, bake this recipe at 350 °F (180°C) for around 10 minutes — just make sure your bowl is rated for that temperature.

Can I make a microwave banana cake bowl without eggs?

Yes, you can make this cake bowl without eggs.

Can I make a gluten-free microwave banana cake bowl?

Yes, you can make this cake bowl gluten-free.

  • Substitute almond flour starting at 1:1 for all-purpose (white) flour. More resting time before baking will help hydrate almond flour to bind all ingredients better, or  ½ – 2 tsp xanthan gum or cornstarch in each cup of almond flour will also work as a binding agent. 
  • You can also substitute 1/4-1/3 cup of coconut flour for every cup of all-purpose flour (grain flour).
    • For every ounce (1/4 cup) of coconut flour, you typically need one egg and sometimes you might need more. Coconut flour does not have gluten in it and eggs are needed to keep the product together.
  • Note to hold back some liquid by using up to ½-¾  in one go and adjust it accordingly to get the same consistency as the recipe.

What can I use instead of vegetable oil?

  • You can substitute coconut oil, cooled melted butter, or ghee for vegetable oil.
  • You can also substitute applesauce for oil but the result will be very different.

Can I use any bowl and what size works the best?

  • It’s important to use a microwave-safe bowl to ensure safe cooking.
  • Regular bowls may not be designed to withstand the heat generated by the microwave and could crack or shatter.
  • The capacity is around 2 cups (16oz/480ml).

Why did my cake turn out eggy and rubbery?

A dense, rubbery, or overly-eggy cake was due to overmixing or overcooking.

  • Overmixing your ingredients will create gluten strands: try not to overmix next time. Make sure ingredients are at room temperature and bring ingredients together until just combined. A few lumps are ok–they’ll work themselves out. 
  • Do not overcook the batter. Microwave the cake bowl at 15-20 second intervals until there’s no wetness on top, it’s firm to touch in the center, and the edge pulls away from the mold a little bit or a toothpick inserted comes out clean.

Gemma’s Pro Chef Tips For Making Microwave Banana Cake Bowls

Honestly, mug cakes, or now cake bowls, couldn’t be easier to make — but that doesn’t mean there can’t be some helpful tips to give you the best microwave cake experience possible!

  • The riper, the better, when it comes to baking with bananas. They impart more flavor and sweetness to baked goods.
  • Even with a simple microwave cake, room-temperature ingredients are always best!
  • Every microwave is different, so your cooking times may be a bit different. The cake is done when a toothpick inserted in the center comes out clean and when the cake springs back when gently pressed.
  • You can add mix-ins just after the flour: a ¼ cup (1¼ oz/35 g) of chopped nuts or ¼ cup (1½ oz/43 g) of chopped chocolate of your choice.
  • Some simple topping ideas are sliced bananas and a drizzle of microwave salted-caramel sauce or a dollop of whipped creamhomemade Nutella, or cream cheese frosting.

Ingredients

  • 1 medium (4oz/115g) overripe banana
  • cup (2 oz/57 g) dark brown sugar
  • 2 tablespoons whole milk (at room temperature)
  • 2 tablespoons vegetable oil
  • ½ teaspoon vanilla extract
  • 1 large egg (at room temperature)
  • 6 tablespoons (1 ¾oz/ 50g) all-purpose flour
  • ½ teaspoon baking powder
  • pinch of salt
  • whipped cream, caramel sauce and nuts (for garnish)

Instructions

  • In a medium, microwavable bowl, mash the banana with a fork until almost smooth.
  • Whisk in the brown sugar, milk, oil, vanilla extract, and egg until well blended.
  • In a separate small bowl, stir together the flour, baking powder and salt.
  • Stir the dry ingredients into the wet and mix until the batter is smooth.
  • Microwave on high for 90 seconds. Check for doneness and continue to cook in 20-second increments, until cooked through. (It will most likely be done in about 2 minutes.) This timing is based on a 1200WATT microwave so check your wattage.
  • Decorate with cream, caramel sauce and chopped toasted nuts. Enjoy straight away!

So, enter one of my most popular mug dessert recipes yet — my Microwave Mug Brownie! This indulgent Chocolate Brownie in a Mug is a single-serving of heaven just for you and possibly the best, fudgiest brownie ever (other than my Best-Ever Brownies). And it only takes 1 minute to make in the microwave — and a smaller amount of ingredients you would normally need to make a full batch.

Now you have exactly zero excuses not to make a brownie for dessert tonight!

What Is A Microwave Brownie In A Mug?

Honestly, the title says it all. It’s a single serving brownie made with fewer ingredients, mixed together & microwaved right in a mug in about a minute. It’s fast, sweet, chocolatey, and everything you could want from a brownie.

How Long Does It Take To Make A Brownie in a Mug?

Everyone loves a Chocolate Brownie! Whether you are a chewy brownie lover or a fudgy gooey brownie lover, at the end of the day we all love the same cake. The fact that you can mix it in less than 5 minutes and cook it in 1 minute seems too good to be true, but it’s not! My microwave mug brownie is the real deal!

How To Make A Microwave Mug Brownie

If you’re looking for the easiest brownie recipe, this is it. If you’re looking for the fastest brownie recipe, this is also it. Here’s how you make it (and don’t forget to get the full written recipe, with measurements, down below):

  1. In a medium microwavable mug (roughly 1 cup measurement) mix together the flour, cocoa powder, brown sugar, and salt — yes, you can do this right in the mug!
  2. In to the dry ingredients add in the milk, oil, and vanilla extract and mix together until you form your batter. Combine it, but be sure not to overmix.
  3. Mix in the chocolate chips. (If you don’t want to cook them off straight away, then place them in the refrigerator for up to 24 hours!)
  4. Microwave for 1 minute 40 seconds – 1 minute 50 seconds or until it has risen and the batter doesnt look wet. (Timing is based on my 1200W microwave so your timing might vary).
  5. Serve warm with vanilla ice cream & enjoy!

What Is A Keto Mug Cake?

Keto mug cake is my latest recipe that I’m adding to my mug cake collection! I have over 100 mug meals — can you tell I’m kind of into microbaking? 

“Ketogenic” is a diet that focuses more on getting calories from protein and fat, and less from carbohydrates. Those on the diet tend to cut out easy to digest carbs, like sugar, white bread, and… a lot of desserts. 

Thankfully, this mug cake is keto-friendly, as it is made with coconut flour.

What You Need To Make A Keto Mug Cake

The easiest Keto Cake recipe you could ask for is made entirely in a mug.

How To Make A Keto Mug Cake

In a matter of (about) a minute (depending on the wattage of your microwave), you can be enjoying this cake! Here’s how you do make a keto mug cake (and don’t forget to get the full recipe with measurements, on the page down below):

  1. In a microwave-safe mug, microwave your butter and cream cheese for around 20 seconds to soften. 
  2. Add the coconut flour, sweetener, vanilla, baking powder, and egg. Mix thoroughly.
  3. Scrape down the sides of your mug and gently fold in the raspberries.
  4. Microwave for 1 minute and then check for doneness. If it is undercooked, microwave for a few seconds more.
  5. Let the cake cool in the mug for 5 minutes before eating.

Gemma’s Pro Chef Tips For Making Keto Cake

  • If you don’t have raspberries, feel free to add any other berry you have on hand. Defrosted frozen berries work as well!
  • If you just want a simple vanilla keto cake, leave out the berries.
  • Change up the flavor! Replace the vanilla extract with a ¼ teaspoon of almond extract or ½ teaspoon of lemon zest and a squeeze of lemon juice.
  • This recipe was written with my 1200-watt microwave in mind. Check the wattage of your microwave, as your cooking times may vary slightly. If you are unsure, microwave the cake for 20 seconds at a time and check for doneness each time.

Hands up if you find yourself glued to videos online called “What I Eat In A Day.” Please tell me I’m not the only one fascinated with what others eat! I go so far as to pause the video and zoom in to see inside their fridge! That’s normal, right?

Anywho, rather than spending my time trying to get to the root of why I’m intrigued by what others are consuming, I decided to make a similar video myself — but with a twist! Breakfast

The cock crows around 6am in this house! Meaning George wakes up talking (and actually often laughing, which is adorable). The first real mug of the day is coffee but I need to eat pretty soon after. As they say in Ireland, ‘My stomach thinks my throat has been cut.’ Translation: I’m starving.

What I Eat In A Day: A spoonful of my Egg Muffin in a Mug recipe!

After breakfast, the whole family heads out for a walk. Exercise is very important for us to function so numerous times a day we will down tools and go for a walk. It’s great for us physically and mentally. Funny enough, Kevin and I often don’t see each other much from 9-5 so we go for a walk to catch up and talk through work things. It’s really helpful.

Work starts around 9 and we get stuck in. We chat with our team, check what is on the agenda for the day, the week, and get down to it.

Lunch

A good lunch is a must for me. I cannot focus on work or be productive if all I am thinking about is food. It needs to be quick as we work through our lunch break and it needs to be basic ingredients because for some reason with all the grocery shopping I do I never see to have much food in the house.

3 O’ Clock Slump!

This is my tea time! Kevin knows there is no disturbing me during my tea time. Whatever he has will have to wait until I am done. Of course, like a lot of Irish people, I am trained that with a cup of Irish tea I need to have something a little sweet.

In the late afternoon, we start to wind down work and spend more time with Georgie. We play with his toys, read books, and often take him and waffles on another walk around the neighborhood before dinner.

Dinner Time

This is my favorite meal! Basically every day I wait for 2 times: Dinner time and bedtime! And because of my diet and what I eat in a day is very carb-forward I had to go with this mug meal below.

When it comes to banana bread, the only downside of making it is having to wait for it to be done — so I’ve decided to solve for that. And guess what? Along the way I’ve also solved for not having enough ingredients to make an entire loaf — so if you only have ONE overripe banana, that’s fine, because you’re about to have some banana bread, baby!

Not only is this fast and economical, but it’s also flourless. It’s basically blended oats (oat flour) and banana. Not only do I recommend you make this immediately, especially if you’re over making entire loaves of banana bread, but you’re not over eating them, but I think you should be doing this with your kids. It’s a great way for them to get a treat while secretly learning about measurements and baking!

The texture is super soft, it’s perfectly sweet, and it’s full of filling and good ingredients. What’s not to love?

How To Make The Fastest Banana Bread

Banana bread is not hard to make, but if there’s an easier route to something, you bet I’m going to take it. Check out how quick it is to make your next serving of banana bread in a mug (and don’t forget to get the full recipe with measurements, down below):

  • Mash the banana in a microwavable mug.
  • Next, add in oil, maple syrup, and vanilla.
  • Then, you’re going to add in the oat flour, baking powder, salt, and cinnamon. Mix!
  • Dot your blueberries over the top. (You can leave them out if you don’t have them.)
  • Microwave for around 45-55 seconds. (This time is based on my 1200 watt microwave, so your timing might vary.)
  • Enjoy immediately for breakfast, snack, or dessert!

Gemma’s Pro Chef Tips For Making Banana Bread In A Mug

  • Mix it up the night before! Talk about time-saving.
  • If you don’t have banana use apple sauce or pumpkin puree
  • Add blueberries for extra flavor, but you can also add raspberries or strawberries
  • Use honey or agave instead of maple syrup
  • If you want only zero-calorie, zero-glycemic sweetener use liquid Lakanto

Ingredients

  • 2/3 medium ripe banana (5 inches)
  • 2 tablespoons flavorless oil (coconut, veg, canola, sunflower etc)
  • 2 tablespoons maple syrup (or honey)
  • ¼ teaspoon pure vanilla extract
  • 6 tablespoons oat flour (just finely blend up oats)
  • ½ teaspoon baking powder
  • pinch of salt
  • pinch of cinnamon
  • 2 tablespoons blueberries frozen or fresh (optional)

Instructions
